Dr. Stone is a safe bet for sure Wolf of Wolves. Depending on gender you could recommend Vinland Saga or Little Witch Academia! Honestly regardless of gender Little Witch Academia is a great first show.

Show them Monster, because the story translates well into non-anime. no big anime tropes here

Everyone should start with Cowboy Bebop and FMA(both of them), those will hook a lot of people.
