We bought Arc's mom a Sous Vide for Christmas and she just recently started using it. You put the steak in the sous vide first then when you get it up to temp, do a reverse sear at the end. https://cdn.anovaculinary.com/wp-content/uploads/2020/01/Anova_PC19_PotDrop_clipped.png

I'm doing Birria tacos, using Joshua Weissman's recipe again. Not using the oxtails this time. Apparently I haven't made Arc watch the Three Cabelleros yet, so that's the plan.
