Probably bring some food along and picnic it in the sand. Maybe swim or surf a little

It all depends on how big a wave you're trying to catch. If the girl had never surfed before we could just stay close to the shore where the waves are smaller. I'd help her out :)

The best place for a first date would be an amusement park :) And all the crazy rides in it.
