Veal is good but you can get the same flavor and consistancy that it provides by mixing pork in with your matured beef. =/

@verucassault Not sure if you know Chef John but he uploaded a recipe of Demi-Glace that is made out of chicken wings and beef shank. Demi-Glace is usually made out of veal bones, but he noticed that combining chicken and beef essentially creates a very similar flavour to veal

Thanks Sparkie @sparkis . I'll check this out. I've been wanting to try Omurice so maybe I can use his recipe for the demi-glaze.
