Random thoughts...

Im tryna experiment with my meatballs last time i did oven baked but im planning on pan searing before putting in the oven so the outside is carmelized and the inside cooks fully. The thing though is im trying to figure out what meat and seasoning i want to use for it. I always try to make things from scratch.

Italian herb blend is always a good starter, if you're not sure what's what. Of course, use some Italian bread crumbs as a binder and a little parmesan. Personally, I prefer fresh herbs, but dry will do in a pinch. Personally, I love my air fryer for that, it gets them a little crispy on the outside. Also, a blend of pork and beef makes a difference, the extra fat from the pork acts as a binder to hold it together and tastes great. Don't go for a high fat blend beef, unless you want greesy and don't eat that after fasting unless you want to be sick.lol

I do a mix of veal and ground sirloin, 1 egg, half a cup to a cup of bread crumbs, then red pepper flakes, basil, oregano. I bake. Pan searing is a pain in the ass.

I'm tempted to mix some ground buffalo and groynd chicken so it kinda evens out or at least the protein will be higher lol.
