Loveless (first anime I ever watched) and Kamikaze Kaitou Jeanne. Sailor Moon and Tokyo Mew Mew are up there, too.

Hard to say, I like a lot of anime openings. Although I've always really liked the first opening for Shakugan No Shana II, so I guess I would say that one.
