So I recently learned what a bunch of -deres meant. Can guy also be classified as one?

It's a personality trait, the terms can apply to either gender.

The term describes a character development process where a person who is initially cold or even hostile towards another person, gradually warms up to them over time. It comes from the terms tsun tsun (ツンツン), meaning to turn away in disgust, and dere dere (デレデレ) meaning to become very affectionate. Think all warm cuddly. A guy can more or less be that way. Don't know about bein all lovey dovey, but someone can certainly show a softer side after getting to know a person.
