Yakisoba, while it is delicious, was brought over to Japan from China. Ramen was also brought over from China. Of course the Japanese built upon the concepts and noodles.
I love sashimi. I eat all kinds. Especially fatty tuna and sweet salmon

Shabu Shabu hands down.
I really enjoy unagi anything. Just eel eel eel for life.
