While i love 103 bones it was pretty one sided so i don't really count it.

Manga wise, I'm looking at both of the tournament arcs in Mahou Sensei Negima. (Ku Fei vs Mana and Jack Rakan vs Negi) Anime though, I love the ham to ham combat of Jojo's Bizarre adventure, but the fights from Akame ga Kill are pretty awesome too. I must say I rather enjoyed many of the combat scenes from Soul Eater though. Both the English and Japanese voice actors did a really sweet job of making every character sound like they're really fighting, not just doing fanservicy grunts.

Don't really do manga but from an anime point of view toky ghoul kaneki vs yamori was great fast paced battle with the original op as background music. From fairy tail natsu & gajeel vs sting & rogue was good if a little one sided.
