Hi baristacat!
First off a heads up, you want to keep at most a 50/50 ratio for fanart/original art.
Preferably more original than fanart. Some cons are very strict on that :/
As for prints it depends on how big the con is.
That said, it's always better to have too many because then you can just sell the extra either online or at the next con.
Good sizes from my experience are- bookmark size, 4x6 - 5x7, 8x10, 11x17
