It depends truly on the situations.
1. If you don't mind that your dream job may not be well paying in the first place, and then demand it be raised, Then No. Have some personal responsibility.
2. If you have a family you are taking care. You need to do #2, Your life is not just yours anymore, if you have kids, it's your job to make sure they can go to school, get medicine and have food in their bellies. The world doesn't revolve around you.
Now if the two above are not into consideration, then go for whatever you want, but recognize the consequences of them. For instance, I would love to live off of just writing, However, it's hardly likely to be able to do so. So, It's a hobby of mine I pursue instead of a job. If something comes out of it, Then something does. But I want a roof over my head, and I like to fill my belly. Plus Air conditioning, it's a necessity. Then there's my other hobbies, such as gaming, ect, that take money. Therefore, I need a good enough job to pay for said things. So I'm more of a #2 kind of guy, but do what you want, It's your life, just don't try to change things because your personal lifestyle might not be very luxurious.

Happiness. I'd choose this over stability. Because even tho life is hard for me, at the end of the day, knowing that I did that one thing that I want most in the world is enough to put a smile of content on my face. My life is simple, not extravagant nor rich, but I love it still. Living a simple life, being content with what I have. Giving love and laughing with those close to me, that's what I live for. You get what I mean?
