Any anime that Yoko Kanno did the music for is quite spiffy. The seatbealts (which Yoko Kanno is apart of) did the cowboy bebop soundtrack, as mentioned before its just wonderful and is a perfect fit for the show. Kanno also did the soundtrack for wolf's rain, Ghost in the Shell S.A.C, and Darker than Black. She really knows how to make special moments in anime become that much more dear to your heart. Also I most assuredly agree that Mushi-shi has a very calming and unique soundtrack. Fairy Tale really surprised me with its music, typically I don't care for shows like it, but I freaking love Celtic metal and anything that remotely sounds like it.
