Yggdrasil from Tales of Symphonia was an excellent antagonist and great character in general.

Kyou Kara Maoh is a great series that doesn't get enough love. Started off as a parody of BL and fantasy (sort of isekai before isekai was a big thing) stories but it actually had a lot more depth, world building, and character development than most "serious" series. It even kind of drops the humor/parody aspects after a while actually but it starts off as an absolute riot. The main character gets flushed down the toilet into another world and it all goes even more bonkers from there.
